I collect full sheets of stamps!
I also collect x-mas seals full sheets.
I focus a decent bit on full sheets

Sheets of stamps are collected for the same reasons why plate blocks, FDC covers and other philatelic material is. The short answer is because we can. If you cant find a market for them. Use them for postage if you can. That's what I do.
I can honestly relate to what you're talking about. For example I have 175 plate blocks of 4, Mail in early blocks of 4, Always use the Zip Code and just blocks of 4 that wouldn't even sell in the dollar a block box at a stamp show. That is 700 stamps! Can you believe that? I cant even give them away to club members in my local stamp club. So they become postage plain and simple.

I've never really got into full sheets but I do have a few. I'm curious how they are displayed by collectors - too big for a regular album or even stock books. Do they make special albums or sheets for full sheets? I assume they do!

Apparently, it was somewhat popular at one time. Interestingly, over the years, I've seen full sheets framed and hanging in offices. Usually, the people displaying them aren't collectors. I guess that they like the theme of a particular issue.

I have broke down my sheet collection for sale. Older sheets don't sell very well so I make Plate Blocks strips of 18 or 20 and use the rest for postage.. The newer smaller sheets sell well. My guess is how to display the older Sheets . Mint sheet files are ok to keep them in but not like displaying in a stamp book.

I'd have to move to Canada to use the stamps for postage, which may not be a bad idea of its own. I am not going to try to sell them, but I'd be happy to give them away to someone on this board. It's only a few sheets, but let me get the stamp numbers and I will add them to this string.

In a mystery. box I won on an SAN auction there are few full sheets of stamps. None are of any notable stamps. Why would anyone collect these?
